Amazing what one finds on the Internet. To make sure it’s on, go to System Preferences > Bluetooth and enable it. But wanted to share this similar work-around, in case any geniuses can figure out why this is happening. This immediately solved my problem.

But, why is this happening? They're quick and QUIET versus most of the generic PC keyboards we've been forced to use for decades. This 100% worked. Here's hoping this helps.
The System Preferences panel will tell you if devices are connected, if they’re low on battery, or if there are any other errors. And usually disconnection and reboot helped. Can't thank you enough! Funnily enough I'm using a cheap hp wired mouse and that works on all usb ports, I also have a matching cheap generic keyboard somewhere as well so will test that

After a lot of experimenting, I resolved the problem by removing my bluetooth keyboard from the bluetooth devices list completely and then plugging in the wired keyboard. Everything now works off my USB hub connected in the back. I restarted, did a safe boot…nothing worked. works.
